Basic Stock
 | 2 tablespoons bacon grease |
 | 1/4 pound smoked ham, diced |
 | 1 1/2 tablespoons flour |
 | 2 pounds onions, finely chopped |
 | 1 medium bell pepper, finely chopped |
 | Pulp & rind of 1 lemon, minced |
 | 3 cloves garlic, pressed |
 | 1/8 teaspoon Worcestershire sauce |
 | Dash of Tabasco sauce |
 | 1 teaspoon salt |
 | Pinch of thyme |
 | 2 cups water |
 | 2 bay leaves |
Use a heavy saucepan to melt the bacon grease over medium heat.
Saute' the ham until light brown in bacon grease. Remove the
ham and save. Blend the flour into the grease and cook,
stirring constantly, until the flour is browned. Add the onion
and mix well. Cook over low heat, stirring occasionally, until
the onion is soft and lightly colored. Stir in the saved ham
and remaining ingredients. Continue cooking over low heat,
uncovered, stirring occasionally, for 30 minutes. Remove the
bay leaves. Makes 2-3 cups. |
