  Basic Stock
bullet2 tablespoons bacon grease
bullet1/4 pound smoked ham, diced
bullet1 1/2 tablespoons flour
bullet2 pounds onions, finely chopped
bullet1 medium bell pepper, finely chopped
bulletPulp & rind of 1 lemon, minced
bullet3 cloves garlic, pressed
bullet1/8 teaspoon Worcestershire sauce
bulletDash of Tabasco sauce
bullet1 teaspoon salt
bulletPinch of thyme
bullet2 cups water
bullet2 bay leaves

Use a heavy saucepan to melt the bacon grease over medium heat.  Saute' the ham until light brown in bacon grease.  Remove the ham and save.  Blend the flour into the grease and cook, stirring constantly, until the flour is browned.  Add the onion and mix well.  Cook over low heat, stirring occasionally, until the onion is soft and lightly colored.  Stir in the saved ham and remaining ingredients.  Continue cooking over low heat, uncovered, stirring occasionally, for 30 minutes.  Remove the bay leaves.  Makes 2-3 cups.
